Professional cookery students at West Nottinghamshire College will serve up a taste of summer to diners attending their graduation dinner.
Amy Metcalfe and Ruth Robinson are planning a six-course menu featuring smoked wood pigeon, curried carrot soup with coriander chapattis, Malibu and lime sorbet, slow cooked pork loin and pan-fried sea bass for the fine dining evening on Friday 10th June at the college’s Number 19 Brasserie.
The 20-year-olds, who are just weeks away from completing their NVQ Level 3 in Professional Cookery, also have a selection of desserts for diners including banoffee cheesecake, chocolate and raspberry gateau and a dish called ‘afternoon tea’ which features carrot cake, rhubarb and ginger trifle, Bakewell tart with a green tea and mint jelly.
Amy, who cites Gordon Ramsey as one of her cookery heroes, said: “I got the idea for the pork loin dish from the BBC’s Great British Menu and I also enjoy watching Gordon Ramsey’s approach to cooking. We’ve tried to include a summer theme to our graduation meal.
“My favourite foods to work with are desserts and I would love to become a patisserie chef one day.”
Ruth, from Rainworth, and Amy, from Warsop, will be joined at the graduation event by fellow hospitality, supervision and leadership student Phil Dove, 20, from Kirkby, who will be serving cocktails and drinks to diners throughout the evening.
Diners can book a table for the graduation meal, which costs £24.95 per person, by calling the No. 19 Brasserie on (01623) 413629. Tables will be available from 6.30pm.
