George’s Tradition group chief executive Nick Hogan said the provenance of the food they serve, as well as the way it is prepared was key. Here he explains the ethos behind the company.

“At George’s we pride ourselves on the quality and consistency of our fish and chips. Our long-term relationships with the pick of British suppliers allows us access to the best potatoes, fish, and other key ingredients. Virtually every product we sell is exclusive to George’s.

“We continually quality check our food at every stage, from the farm and boats to during service to ensure we deliver great quality consistently.

Potatoes

“We hand pick the very best quality seed for the following season’s crop. This seed, with love, care and Mother Nature’s blessing, eventually becomes part of the top 5 percent in terms of frying quality from all potatoes grown in the UK.

“Our potatoes are grown in partnership with a farm in Shropshire and are exclusive to George’s. The only place you can taste a Georges potato is as a Georges chip.

“Our potatoes are British Maris Piper, the absolute king of the chipping potato. We believe (apart from four weeks when ‘new’ season potatoes are first harvested) we are possibly the only restaurant group to use British Maris Piper all year around.

“George’s uses over 1600 tonnes of British Maris Piper potatoes per year.”

Cod

“Our Cod is caught in the ice-cold Arctic waters of the Barents Sea. The pure Cod fillet without anything added is frozen within 20 minutes of being caught, and all the flavour and goodness is locked in. We believe this process gives us the absolute best-tasting Cod available.

“In George’s, the only time our Cod defrosts is during cooking, we also adhere to very strict processes to deliver consistent amazing quality, a skill that we’ve developed over many years. Our fish is renowned for its sweet and juicy flakes.

“All our Cod is caught in the same part of the world, and only 5 fishing boats are able to catch and produce the quality of fish acceptable to us at George’s.”

Batter

“The batter we use on our fish is a secret known only to a handful of people. We’ve been serving this batter for over 25 years. It’s been developed to give a unique flavour but also to be incredibly thin which means it allows the fish to cook perfectly and quickly, locking in all the flavour. It also means that it contains less calories and oil than traditional thick batters. We believe the batter should compliment the fish not overpower it, our batter is light and golden and allows the beautiful flavours of the fish to be the star.”

Oil

“We replace our cooking oil with new virgin oil twice a day, which is then continually filtered through the day to give a beautiful, clean and crisp fry.

“We’ve been electronically monitoring our oil quality for over twenty years, in fact we were one of the first independent companies in the country to adopt this technology. By using accurate electronic measuring equipment, we ensure that every site has the same benchmark on oil quality. We serve around 25,000 people weekly and we feel a very strong obligation to all our customers that they taste our great food not our oil!”
