Cook up a harvest treat

Families are being urged by Derbyshire County Council to cook up a harvest treat this month by being canny with their food.

Wasting good food costs us a whopping £33 million a day but there are lots of imaginative ways to make the most of fruit and vegetables which are getting past their best.

The other thing is to freeze your food for another time when it can be put to good use.

Councillor John Allsop, cabinet member for technology and recycling, said: “Cutting down on the amount of food thrown away can help families save up to £50 a month.

“We’re hoping that people will take the opportunity this September to try out some harvest-themed recipes and reduce the amount of food sent to landfill.”

Here are some great recipes to try out:

* Vegetable lasagne – which uses up lots of seasonal vegetables:

* Vegetable stew – you can use almost any vegetable in this recipe:

* Vegetarian bean chili - this recipe can be frozen for up to two months:

* Leftover chicken and tomato spiced curry – great for using any leftover chicken:

* Quick fruit jam – a great way of using up spare fruits:

This is also a good time of year to make the most of tempting in-store offers by ‘buying one and sharing one’ with friends, family or neighbours.

Plus if any gardeners have a glut of any home grown fruit and vegetables why not share them with anyone you know who isn’t growing their own? Or you could freeze them for later in the year.

* This harvest the Love Food Hate Waste campaign is encouraging us to realise the value of our food.

It’s not only the money we waste when we throw away good food, it’s also the water that’s been used to grow and produce it and the effort of bringing the food to our table.

In the UK about 15 million tonnes of food is thrown away every year. Almost 50 per cent of this comes from our homes.
